Pumpkin Oat Bread (Tweeked )

1/2 cup(s) Smart Balance Light buttery spread with flax
1 1/2 cup(s) packed light brown sugar
5 item(s) egg white(s)
1 3/4 cup(s) canned pumpkin
1/4 tsp sea salt
1 tsp pumpkin pie spice
1 1/2 cup(s) all-purpose flour
1 1/2 cup(s) uncooked quick oats
2 1/2 tsp baking soda
(I also added 2 teaspoons of vanilla extract, but forgot to put them into the recipe builder. Shouldn't change the points value, anyway.)
Preheat oven to 350. Spray baking pan with cooking spray. Cream smart balance and brown sugar. Add eggs and pumpkin and beat well. Add salt, pumpkin pie spice, flour, oats, and baking soda; mix thouroughly. Pour batter into prepared baking pan. Bake until a toothpick comes out clean, about 40-45 minutes. Cut into 24 pieces. 3 points plus per piece.
- I thought the bread could have been sweeter, so I may add more sugar next time. However, when I ate it warm with a little melted smart balance and some honey, it rocked! Most definitely serve this with coffee, and it will be like having a coffee house treat in your own home.
- The original recipe called for 3 whole eggs, but my husband is watching his cholesterol, so I changed that. It also called for half a walnut to be placed on each piece before baking. I removed that, and both my changes resulted in a smaller points + value.
